The power of plant pigments

Sabbatical research focused on the health benefits of plant pigments

Dr. Angela Montel, professor of biology at Bluffton University, will present the Colloquium, “The Power of Purple (and Red and Blue and Green and Yellow and Orange) Plant Pigments to Promote Human Health,” at 4 p.m. on Friday, Sept. 6, in Centennial Hall’s Stutzman Lecture Hall.

During her presentation, Montel will discuss her fall 2018 sabbatical research focused on the health benefits of plant pigments such as beta carotene, chlorophyll and members of the flavonoid family. 

Montel received an Ohio Project Kaleidoscope STEM Teaching Partnership grant last year to further explore the topic and collaborated with Dr. Rachel Kopec, an assistant professor of human nutrition at Ohio State University, and Dr. Jessica Cooperstone, an assistant professor in food science and technology at Ohio State University. Montel’s research is benefitting biology students as well as nutrition and dietetics students at Bluffton.
